Why We Blame the Birthday Cake

Every parent knows sugar sends children bouncing off the walls. But when scientists fed children sugar in careful trials, they could not find the effect anywhere - and one experiment suggests the rush was mostly in our own heads.
Picture the last birthday party you survived. A dozen small children, the cake demolished, and within twenty minutes they are tearing round the garden as if someone plugged them into the mains. A parent catches your eye and says it, the way we all say it. Must be the sugar.

It is one of the most confident things parents believe. Sweets go in, chaos comes out. We plan our lives around it. We ration the fizzy drinks before bedtime and quietly dread the days after Halloween.

Here is the odd part. When scientists have actually tried to catch sugar in the act, in trial after trial, they cannot find it.

What happened when they tested it

In the 1990s, researchers set out to measure the thing everyone was sure existed. In one careful study, children spent weeks on diets loaded with sugar, then weeks on diets sweetened with a substitute instead. Nobody involved knew which was which at the time, not the children, not the parents, not the team running it. They tracked dozens of measures of behaviour and thinking. They found no difference at all.

That was not a fluke. In 1995 a group led by Mark Wolraich gathered sixteen separate studies that had each tested sugar against a dummy under controlled conditions. Put together, the verdict was the same. Sugar did not change how children behaved, and it did not change how well they concentrated.

These were not soft studies. Some included children whose parents were certain their child reacted badly to sugar. Some included children already diagnosed as hyperactive. The effect that feels so obvious at the kitchen table simply refused to appear when someone was measuring it properly.

The experiment that turned the camera around

So if it is not the sugar, what is it? A study from 1994 gives an uncomfortable answer.

Researchers took thirty-five boys aged five to seven whose mothers described them as sensitive to sugar. Every single boy was given a drink with no sugar in it whatsoever. Then half the mothers were told their son had just had a big dose of sugar. The other half were told he had had none.

The mothers who believed their son was sugared up then rated his behaviour as clearly more hyperactive. Watching the very same child, they saw a wildness that was not there. They also hovered closer, criticised more and kept a tighter grip, as though managing a boy who needed managing.

The sugar was in the mothers' heads, not the boys' blood. Once you expect to see a child bouncing off the walls, you find it. And a parent braced for trouble has a way of helping it along.

So why do we all remember it happening

Think about when children eat the most sugar. Birthday parties. Christmas morning. Halloween. Holidays at the grandparents. Occasions that are loud and exciting, packed with other children, and light on the usual rules about bedtime. The cake arrives at the very peak of the mayhem, so the cake takes the blame. We are mixing up the party with the pudding.

Memory does the rest. The one time a child went feral after a fistful of sweets stays with us for years. The hundreds of biscuits that led to nothing much leave no mark at all. We remember the hits and forget the misses, and a myth quietly hardens into common sense.

The part that is not a myth

None of this means what children eat has no effect on how they act. It means sugar in particular has been let off the hook, while something else was quietly found guilty.

In 2007, researchers at the University of Southampton ran a large trial paid for by the UK's Food Standards Agency. Around three hundred young children drank a mixture every day. On some days it held a blend of artificial food colourings and a common preservative. On others it was a harmless look-alike. On the days with the additives, the children were, on average, a little more hyperactive.

The effect was small, and it did not touch every child the same way. But it was solid enough that the European Union now asks foods containing those colours to carry a line saying they may affect activity and attention in children. A good number of British manufacturers simply took the colours out rather than print the warning.

So the troublemaker was never the sweetness. For some children it may be whatever is used to turn a drink a violent shade of red.

What we were really watching

There is something here that stays with you, and it stretches well beyond snacks. We spotted a pattern, felt sure of it, and organised our lives around it for decades. The pattern was mostly us.

The same doubt is worth carrying into the other things we feel certain we know about our own children. When a child seems suddenly different after something, try a quiet question. Am I watching what they actually did, or what I expected them to do?

The cake, as it turns out, was mostly innocent. It was the party all along.
